This Blanc de Blancs Extra Brut expresses the characteristics specific to the predominant harvest year that composes it, the year 2019, sunny and warm. It remains faithful to the style of the House developed by the Cellar Master, a true ode to Chardonnay. Thus, Etienne Eteneau has taken special care in creating a selective cuvée that explores Chardonnay, the iconic grape variety of the House, to craft a Blanc de Blancs Extra Brut. A technical manual handwork of “poignettage” makes it a unique piece. This meticulous work involves a gesture of 12 “poignettages” every three months that promotes autolysis of the yeast in the bottle. These repeated and dynamic exchanges nourish the wine in aromatics, giving it incomparable richness and a bubble of rare finesse.

Gourmand dominance at the first nose (vanilla, almond, brioche, pear, and star anise), followed by very distinct notes of white flowers. Some toasted aromas as the wine unfolds in the glass, a guarantee of beautiful maturity.
Clear and tense attack where Chardonnay unfolds and blends into a broader and more enveloping palate, achieved through interactions between the wine and yeast amplified by the “poignettage” technique. The initial flavors of apricot are expressed. Notes of pomegranate and Corinthian raisins are expressed.
